Step One: Start your morning with a CCK style breakfast-Chocolate Chip Cookie Dough Oatmeal
Please do not let the picture fool you…in the middle of eating this, the sugar to oats ratio was just not doing it and we proceeded to add more chocolate chips, raw cocoa and brown sugar to the mix (Go check out CCK for more of her oatmeal delights)
Step Two: Make Gingerbread Cookie dough (courtesy of The Joy Of Vegan Baking Cookbook; we used brown sugar instead of granulated and our choice of molasses this time was blackstrap unsulfured molasses), freeze, roll out, and proceed to cut out into your favorite christmas shapes (we made christmas trees, gingerbread men, and gingerbread kids! The picture below is just one cookie sheet out of many that we made). Bake and cool
At this point you may plate your delicious warm treats and eat them until a sugar coma hits
But here at Blissful Bellas’, we don’t do anything half way…so proceed to step three if you, like us, are not satisfied with your sugar intake just yet….
Step Three: Find all the sugary decorations you can in your cupboard (we had christmas candy corn, christmas tree gummies, christmas snowmen gummies, vegan chocolate chips, sprinkles, raisins, and brown sugar icing)
Step Four: Pile on as much sugary treats as you can onto your gingerbread cookies (feel free to snack as you decorate to continue your sugar inhalation)
Step Five: Admire your artwork before diving in!
Step Six: Rock out your sugar induced Blissful Bella self without caring what others think! (and have your roommate snap a picture so she can mock you for it later)
And just so you don’t think we didn’t actually have anything nutritious in between these bouts of sugar induced meals, dinner was a warm red lentil stew made with 1 idaho potato, 1/2 a large yellow onion, chopped carrots, chopped celery, kale and various herbs and spices left simmering for 2 hrs and creating a delicious marrying of flavors
What is it about red lentils that make it good with just about anything?!
and don’t worry…we didn’t actually finish all the cookies between us two (though we might have if it were up to us and our nutrition health conscious minds were not prodding us in between our third helpings of cookies
)…the rest are stored away and will be going with us to a special destination this weekend! We will update later this week about this, so check back later!

Ohmigosh, definitely worthy of all seven entries! And I’m taking down the idea for the red lentil dish too, b/c it sounds so delicious and comforting!
